Pumpkin and potato gnocchi of Grandma Emma

During the last days we have prepared with Samuele, Francesca and the children of the Scuola dell’Infanzia di Mezzegra pumpkin and potato gnocchi. Grandma Emma helped us to knead, cut and flour. It was really fun and exciting to share with our young chef this quick and easy recipe.
Ingredients for 4 people:
500 grams pumpkin
500 grams potatoes
150 grams flour
1 egg
Salt

Slice the pumpkin and cook in the oven.
At the same time boil the potatoes already peeled .
Once cooked, crush the ingredients with a fork and mix them with the egg.
Add flour and mix it with salt.
Put a little flour on a work surface and working the mix of potatoes and pumpkin, make a stick and cut into small dice.
Boil water, add salt and put in the gnocchi. When they rise to the surface they are cooked.
Once ready you can dress as you like: with tomatoes, pesto sauce, butter and sage, oil and grain, etc..
The gnocchi of Grandma Emma are prepared exclusively with garden fresh potatoes and pumpkin of Grandfather Rino !!
